I'm not sure if this has been mentioned elsewhere, but there is a company making energy-bikes called Pedal Power. They are not cheap, but they are committed to open source, another idea that's come up: http://pedal-power.com/
In the line of "low energy appliances", many people use laptops at coffee shops and shared workspaces. Creating a shared workspace or coffee shop where users generate their own electricity could be very cool, but the up-front costs would be pretty huge.
But once in place, it would be easy for people to generate the necessary energy for laptops and cell phones: http://science.howstuffworks.com/innovation/science-questions/question658.htm
Or it could tie in to https://openideo.com/challenge/renewable-energy/ideas/from-excessible-to-accessable-public-plug
It would also be great if this packet could also show the cost benefits of being energy efficient. Putting an "estimated annual savings" on projects like insulating your hot water heater or converting to efficient lightbulbs could have a big impact.
Edit: Just checked out the resources that Natalie posted, and they are really great. I think her resources are a fantastic place to launch from.
