Anthony, We have taken on health and safety as a top priority. In fact, we worked with the health department in NYC to redefine protocols on reusables and have done the same in Colorado as well. We have our own license from the health department and use commercial dishwashers and sanitizers. Additionally, all of our service containers that we transport and store Vessels in are food grade. Finally, stainless steel is considered one of the most highly hygienic materials- which is why commercial kitchen surfaces (and cooking equipment-mixing bowls, etc.) and resturant silverware is usually made of silverware. Users get a clean Vessel at every check-out--cafes won't accept one for reuse (they go to be cleaned and sanitized every time) so we ensure the most sanitary system possible!
