Recently, I was in a Brazilian restaurant outside of Boston and they had two payment models for their buffet: the all-you-can-eat option for a fixed price and the pay-for-what-you-eat option based on weight. A clever approach that appeals to individuals across a large socio-economic range. This approach addresses nicely the broad psychological issues around abundance vs. scarcity with food, and shows business savvy, but I’d be curious to know what effect it has, if any, on the reduction of waste.
