Karen, great to see you're going to put it all together! I am researching food waste, and therefore don't know that much about pork! You would need to speak with those involved in either the alternative swine unit, NC Choices, or others at NC State that work on pork production. Let me know what happens, though! I know one heritage pig farmer that feeds leftovers from a farmers' market. (Also I have met Dominika who works with Feedback. Her work is much closer to mine). All the best! Lisa
