Thank you for your feedback. I'm not familiar with the topic food liability. However, as this type of "restaurant" is quite different to normal restaurants (there is no menu, people bring their own food etc.) , I can imagine that regulations that govern food service can be avoided for the most part. I think the word restaurant has to be replaced by something more neutral. (Just as Uber does not claim to be a taxi service but a ride sharing business to avoid the obligation of certifications for Uber drivers.)
As there will be professional cooks, who can consider the condition of food very well I don't think food safety will be a great issue for the consumers.
