Hi Kate,
I think that fish, some types of cheese and meat but and also high quality pastry and expecially wine need to be kept under control to be sure not to loose quality.

I definitely think we could work on extending the idea to cover all the cycle and thus also post-shelf life. Maybe the technology needs to be re-analysed to use less expensive tags that could work on single items and inside a refrigerator. Contact me if interested to push forward this idea for commercial purposes.
