I took a great MOOC on Coursera called "Learning how to Learn". This course teaches people how to harness their brain power and learn effectively! I highly recommend checking it out, I believe it is the most attended MOOC on Coursera. The reason why I mention this is because it has become a community itself. We have weekly emails from the course instructor and many students have started to meet up that took the course or are taking the course. Maybe there is an opportunity to talk to these instructors regarding your proposal? They probably learned a lot in how to create an effective course!
I like this idea a lot. Have you heard of gap-year that students take? It seems to be fairly common in European countries. Beyond the physical "shadowing", what type of assignments do you see students completing? Also, what type of benefit would there be for companies participating? This program could serve as a good recruitment tool for full time employees after college graduation or even part-time help that full time students can give once their shadow program is over.
