The Market on the Menu

Restaurants have a great power to educate. By putting fresh products from local producers, purchased at the market daily on the menu, they can raise awareness. Not only about good food, but also about local production and producers.

I have always liked to be surprised by the menu in restaurants that let themselves be led by the availability of ingredients on markets. We have quite of few of those in Riga. Pictured are the amazing pork sausages of one of them.

Hey Justin – I love that style of menu in Bologna... have enjoyed some brilliant meals there myself. One where there was a map which showed which local farms they sourced produce from. It even inspired us to take a drive in that area – and we bought some divine cheese while we were out that way.
