The Butcher, His Wife and The Pig

I am inspired by Chef Ryan Farr and his wife Cesalee who opened 4505 Meats, a local butcher shop that provides locally and ethically raised meats. They also offer public and private butchering classes so that people can learn how to butcher their own pig, cow or lamb. During each class, students are provided with locally sourced WHOLE steer, hog, etc. and taught to break it down into manageable portions. 4505 also provides themes CSAs built around...meat. The only thing missing is learning how to humanely slaughter animals.
