Many Americans may pay a few extra bucks for a meal created by Bobby Flay or Morimoto - but how many would pay an extra dollar a pound for organic produce created at a high end farm nearby? Restaurants such as Craft in NYC promote the local farms they work with - and begin to build a connection between food and production.
