The FAO has prepared an excellent toolkit for setting up and running a school garden:

The Toolkit is so clear that the kids could try setting up an edible schoolyard by themselves.

David's suggestion is quite true. I wonder about creative ways for making things grow indoors with little space/light/soil. How about sponsorship from Hydroponics companies, and this could be even part of the science class as well.

I think this is a great idea. I worry about areas that don't have land (city schools) or are in arid climates. How about some indoor gardens as well? Part of the kids morning routine during announcements - water their plants, etc. There could even be awards for the best growers - teach kids the hardwork that is involved just to get one vegetable!
