We will use a foodtruck both to collect ingredients that would be wasted in food fair and markets, prepare and serve 1k snacks to passersby.

I see that you have tried this out in Mexico.  Do you have any contacts I can reach out to, I've had a hard time finding active groups working on this issue here in Mexico City.  I'd love your feedback on an idea I posted that touches a little on this concept:

We tried a pilot for 1 year with CMR group ! They implemented into 4 restaurant chains (Wings, Chilis, La Destileria and Olive Garden) but the percentage donated fro each Satisfeito Dish was soo minimum that financial results didn't reach the companies goals x marketing and media investments !
