Describe your relationship to the place you’ve selected.

The University of Guadalajara (UDG) is one of Mexico’s top public higher education institutions and is located within the state of Jalisco. It is fundamental for the formation of high quality human resources and the production of scientific and technological knowledge that support the development of Jalisco. The cultural life and artistic wealth of the western region of Mexico cannot be possible without the pioneering and unique contribution of the University of Guadalajara. It is the second largest university in the country with more than 120,000 students (undergraduate and graduate academic programs) in 15 college campuses and in the online university system. UDG stands out as one of the most important institutions and active universities involved in internationalization.

 The university strives to be a higher education institution that makes a crucial contribution to be a better educated, more cultivated, more organized and with a more virtuous civic life, with a stronger economy and more democratic society.

Describe the People and Place: Provide information that would be helpful for an outsider who has never been there and may have no context about this Place to better understand the area.

Mexico is a country with an enormous biological and cultural wealth. Its heterogeneous climatic characteristics and its geography give the country a variety of bioclimatic landscapes and unmatched biological diversity. Its history goes back more than 4 thousand years. The journey of the nation in four centuries of history and its continuous transformation has been recorded in the ways of its inhabitants that are characterized by being warm, friendly and helpful. More than 130 million inhabitants are distributed in its territory.

Jalisco stands out for its varied culture, it is the cradle of mariachi and charrería. The main language spoken is Spanish, but it is also home to 7 ethnic groups that enrich the culture with their languages and customs. Jalisco also stands out for the production and preparation of traditional foods that have become icons throughout the country, among which tequila, yahualica chili, milk and egg stand out and of course avocado as the country's main export product. The intensive production of these foods has made the production system a vulnerable activity since the unhealthy practices can risk the future of production consumption of this foods.

Challenges: Describe the current (2020) and the future (2050) challenges that your food system faces.

Climate change generates direct effects on agriculture, altering cycles, reducing yields, increasing diseases in crops. However, the agricultural system focused on profit-making also contributes to climate change and the environmental crisis through greenhouse gas emissions, overexploitation of water, inappropriate management of natural resources, and land use change. Achieving the balance between the production of healthy and sustainable food and climate change  mitigation is the greatest current and future challenge.

Address the Challenges: Describe how your Vision will address the challenges described in the previous question.

The Carbon Footprint represents the net amount of Greenhouse Gases (GHG) emitted into the atmosphere resulting from the activities of production or consumption of goods and services produced only by human activities that are derived, mainly, from the consumption of energy, burning of fossil fuels and waste generation.

The estimation of the carbon footprint of a productive system allows for timely action that affects the mitigation of greenhouse gases and therefore the mitigation of climate change. This project contemplates the measurement of the carbon footprint and the training and transfer of knowledge to the key actors to transform the way food is produced in Jalisco and place the state as a reference for the rest of the country.

With this project is intended to expand and monitor the following specific actions, Through the following actions:

1- Identify the sources and sinks of greenhouse gas emissions in the agri-food sector

2- Estimate the carbon footprint of the principal agricultural products of Jalisco.

3- Train professionals linked to the productive and governmental sector in environmental responsibility.

4-Link between the academic sector with the agri-food sector for training in sustainable food production

5- Generate proposals for carbon neutralization agricultural production sector



Full Vision: How do you describe your Vision for a regenerative and nourishing food future for your Place and People for 2050?

Food production in Jalisco is a benchmark in the country and the world. Production systems focused on the production of sustainable and healthy food maintain strict control over their processes, providing not only fair economic income to the population, safe work and healthy food, but also providing ecosystem services acting as CO2 sinks and protecting wildlife. and local flora. Paying for food security, climate change mitigation and sustainable development.
