small holder farmers leave their crops in fields in harvest season when cost of transport exceed market value , that leads to greenhouse gases emission to environment and forms great loss for both of their income and many of natural resources as water , land , fertilizers and energy that go to produce food that no one consumes, Egypt the 5th world tomato producer imports both of fresh and processed tomato while up to 4 million ton of its produce (about 8 million ton ) go to waste due unavailability of appropriate tools for crops processing and storage, rural women suffers of social norms that prevent them from working outside their homes and villages, Egypt suffers of food insecurity ,high rate of unemployment especially in rural areas, and continues increase of fuel prices that affects dramatically on crops transportation cost , despite food dehydrators can form solution its industry is totally absent in Egypt, technologies that developed in industrialized countries neglect purchasing power and local conditions of those who may need it in developing countries, families in urban areas in Egypt cant secure enough food for their children due to high cost of fresh fruits and vegetables, in the same time poor hungry farmers in rural areas leave their perishable crops in fields with no harvest due to high transport cost that prevent them from access high value distant urban markets where huge need to get high income ,the result is the increase of fresh food prices in markets of urban areas due to inevitability of enough amounts of fruits and vegetables ,and inability of rural farmers to secure enough food for their families to be consumed in off season, so the problem is not because of unavailability of food, but it’s because of inability of rural farmers to transport their crops to urban areas, thus rural farmers are in need for appropriate tools to quickly process their perishable crops at farm level before rot can be occurred, to extend crops shelf life for later sell , export or to be consumed by rural farmers themselves , and reduce both of crops bulkiness and weight thus reduce transport cost to enable them access urban areas where availability of much food can reduce food prices to cover urban need in reasonable price.

The scarcity of natural resources, will limit Egypt ability to reclaim more land to feed its growing population, thus Egyptian farmers soon will be asked to produce more and more food from less and less natural resources, in the same time Egypt climbs the top of the highest contributing countries to food waste, rural farmers cant secure enough food for their families,continues increase of fuel prices, effects dramatically on crops transportation cost, and forces farmers to leave their crops with no harvest when transportation cost exceeds crops market value,both of food waste and loss form great loss for farmers income and harm environment , increasing food production to increase food security has destructive effect on environment, ( producing just one ton of tomato emits up to 90 kg of CO 2 to environment, while just one ton of waste tomato emits up to 22 M 3 of methane gas to environment) , so we have to put in consideration that the environment pays for the food we grow and the food goes to waste , for reasons above ECO believes that reducing post-harvest loss is the best and may be will be the only option to overcome hunger on the long run, it believes that the main challenge is to help rural farmers to reduce post-harvest loss , and extend shelf life of their perishable crops ,by providing them with needed appropriate tools to reduce both of bulk and weight of their perishable crops , thus reduce transport cost to enable them access high value distant urban markets to get fair income for their produce, increase food availability, thus reduce food prices in such huge distant markets ,while securing some nutrient food for their families, traditional sun drying method is weather dependent , not reliable,cant be done in rainy season, needs intensive land and labor ,slow as food needs several days and sometimes weeks to dry, lake of control in drying process thus food loss many of vitamins and both of natural color and natural enzymes,done in unhygienic conditions as food be contaminated with insects, birds, rates ,--- that reduce too much food quality and price, also sun dried crops are of low shelf life ,are not pure as farmers has to add salt to reduce mold growth,and suffers of uneven drying thus it should be stored in cold storage
