My idea is to explore the possibility of extracting banana juice by smallholder banana producers in Zimbabwe. Most banana producers are located in remote areas, far away from the high value markets. This often results in farmers either incurring huge transport costs to the market resulting in reduced income or the banana's getting bad resulting in further losses. Against this background I would like to explore the possibility of banana juice extraction at a scale manageable within rural communities as a way of adding value to their crop, thus get higher income. In addition the juice can be used by local dairy cooperatives in their dairy processing
smallholder banana producers and dairy farmers. The banana producers will be able to extract banana juice, reduce losses while getting higher value out of the banana. The farmers will be able to sell the juice to the local dairy cooperatives who can widen their milk processing product range; Thus higher income and improved livelihoods
